But there’s a simple truth that gets overlooked in nearly every conversation about coffee quality: the average espresso shot is roughly 95 to 98 percent water. That means the water running through your machine isn’t just a delivery vehicle for flavor, it’s the majority of what’s actually in the cup.

Hard water, meaning water with high concentrations of calcium and magnesium, is one of the biggest silent threats to both your coffee’s taste and your equipment’s lifespan. When hard water is heated repeatedly inside a boiler or heating element, those dissolved minerals don’t stay dissolved. They precipitate out as scale, a chalky buildup that coats internal components. Over time, scale narrows water lines, insulates heating elements so they have to work harder, and clogs the tiny passages inside valves and group heads. The result is slower heat-up times, inconsistent temperature, higher energy bills, and eventually, expensive repairs or premature machine failure.

Beyond the mechanical toll, hard water directly affects extraction. Calcium and magnesium ions bind with coffee compounds during brewing, which can mute acidity, flatten sweetness, and leave a dull or chalky aftertaste no matter how good the beans are. Baristas often chase this problem by adjusting grind or dose, when the real culprit is sitting in the water tank.

This is where reverse osmosis (RO) filtration earns its reputation as the gold standard for commercial coffee operations. RO systems force water through a semipermeable membrane that strips out the vast majority of dissolved minerals, chlorine, and other contaminants, producing water that’s close to a blank canvas. From there, many systems reintroduce a small, controlled amount of minerals, because water that’s too pure can actually taste flat and can be corrosive to certain machine components. The goal isn’t zero minerals, it’s the right balance and consistency.

For an espresso machine service company, this is a conversation worth having with every client who complains about inconsistent shots, longer heat-up times, or a machine that seems to be scaling up faster than expected. A proper water report, paired with the right filtration setup, often solves problems that no amount of dialing in grind size ever will. Regular descaling keeps a machine running, but the right filtration prevents most of that scale from forming in the first place.
